Eggless Cinnamon rolls

Earlier this week, my sister came over and, the first thing she says is "Abby I'm craving cinnamon rolls".
Right away, I started researching how we could make the perfect cinnamon rolls with no eggs. I found a couple of recipes and personalised them to come up with these delicious cinnamon rolls.
Ps: Baking pastries is one of the best bonding activities. 😁
Here is what we came up with.
(This recipe makes up to 12 rolls )

What you need:

For the dough:

  1. 1/4 tsp baking powder
  2. 1/4 tsp baking soda
  3. A pinch of salt
  4. 3/4 cup of warm milk
  5. 1 and Β 1/2 tbsp lemon juice
  6. 1/4 cup vegetable oil
  7. 1 tbsp butter melted
  8. 2 tsp dry yeast
  9. 1/4 cup sugar
  10. 2 Β and 1/4 cup all-purpose flour

For the cinnamon filling:

  1. 1/4 a cup sugar
  2. 2 tbsp butter (Melted)
  3. 1 tbsp cinnamon powder

For the icing:

  1. One Tbsp of milk
  2. 1/2 cup of icing sugar
  3. 1/4 tsp of vanilla essence

Method:

How to prepare the dough:

  • In a cup, mix milk, lemon juice, sugar and dry yeast Cover and set aside for 10 minutes.
  • Sift all the dry ingredients ( baking soda and powder, flour, and salt)
  • Make a well in the dry ingredients and pour in a mixture of vegetable oil and melted butter. Gradually add the yeast mixture while kneading the flour.
  • Once the dough is well-kneaded, cover it place it in a warm area. Let it rise for about 90 minutes.
  • Alternatively, put the dough in the fridge overnight. ( This is what I did )

The next morning:

  • Remove the dough from the refrigerator at least 30 minutes before rolling it.

For the filling and icing:

  1. Mix all filling ingredients, set aside.
  2. Mix all icing ingredients, set aside.

Preparing the cinnamon rolls:

  • Roll the dough into a rectangle
  • Spread the cinnamon filling on the dough
  • Roll the dough into a firm cylindrical shape
  • Cut the roll into 12 slices and place on a baking tray. ( At this point if you did not refrigerate the dough cover the rolls and let them rise for at least 30 minutes.)
  • Preheat oven to 180Β°c. Bake the rolls for 18 minutes. (Once done the cinnamon rolls should be golden brown)
  • Serve and enjoy.πŸŽ‰
