Nothing makes me happier than finding an eggless hack to a great dessert. 🥰 Earlier this week, my sister came over and, the first thing she says is "Abby I'm craving cinnamon rolls". Right away, I started researching how we could make the perfect cinnamon rolls with no eggs. I found a couple of recipes and personalised them to come up with these delicious cinnamon rolls. Ps: Baking pastries is one of the best bonding activities. 😁 Here is what we came up with. (This recipe makes up to 12 rolls )
What you need:
For the dough:
1/4 tsp baking powder
1/4 tsp baking soda
A pinch of salt
3/4 cup of warm milk
1 and 1/2 tbsp lemon juice
1/4 cup vegetable oil
1 tbsp butter melted
2 tsp dry yeast
1/4 cup sugar
2 and 1/4 cup all-purpose flour
For the cinnamon filling:
1/4 a cup sugar
2 tbsp butter (Melted)
1 tbsp cinnamon powder
For the icing:
One Tbsp of milk
1/2 cup of icing sugar
1/4 tsp of vanilla essence

How to prepare the dough:
In a cup, mix milk, lemon juice, sugar and dry yeast Cover and set aside for 10 minutes.
Sift all the dry ingredients ( baking soda and powder, flour, and salt)
Make a well in the dry ingredients and pour in a mixture of vegetable oil and melted butter. Gradually add the yeast mixture while kneading the flour.
Once the dough is well-kneaded, cover it place it in a warm area. Let it rise for about 90 minutes.
Alternatively, put the dough in the fridge overnight. ( This is what I did )
The next morning:
Remove the dough from the refrigerator at least 30 minutes before rolling it.
For the filling and icing:
Mix all filling ingredients, set aside.
Mix all icing ingredients, set aside.
Preparing the cinnamon rolls:
Roll the dough into a rectangle
Spread the cinnamon filling on the dough
Roll the dough into a firm cylindrical shape
Cut the roll into 12 slices and place on a baking tray. ( At this point if you did not refrigerate the dough cover the rolls and let them rise for at least 30 minutes.)
Preheat oven to 180°c. Bake the rolls for 18 minutes. (Once done the cinnamon rolls should be golden brown)
